Meatless Monday ~ Veggie Stuffed Shells

This is our second official Meatless Monday. In an effort to ease a certain beloved meat eater (Shane), into this new way of eating, I have been focusing on pasta dishes initially. Last week we had baked pasta. I essentially used leftover pasta of various shapes and sizes, pasta sauce, and goat and mozzarella cheese. It was pretty good and something that we usually have with ground beef mixed in so it was an easy "transitional" meal, if you will. This week we are having veggie and cheese stuffed shells and then next week we'll start actually having a little more fun.

This week's recipe comes from kraft.com . I find that they have good recipes for me to "jump off" from, from time to time. In this case, I actually got it from a friend and was pretty happy with the whole thing. You can access the recipe from here .

The Verdict?

It was okay. Okay enough that I will make it again with some modifications. I think I'll use part skim ricotta cheese instead of cottage cheese and not use the red peppers because while they are yummy the texture was a little off. I think I'll also use Italian seasoning including some fresh herbs instead of the salad dressing packet. So really, I'll just do it my own way... he he...


I apologize for the terrible picture but we were so very hungry tonight and there wasn't a lot of time for artistry. As you can see I served it with crusty sourdough and olive oil with herbs (YUM!).
