Meatless Monday ~ Cheese, Crackers, & Fruit

I promise I will get better about taking pictures! For someone that loves photography I seem to be terrible about taking and sharing pictures lately! So, pictures to come, promise!

Tonight's Meatless Monday meal came about because this past weekend was our wedding anniversary and we had gone away for the weekend and came back after yummy food and being super lazy to not really feeling like a heavy meal and not really feeling like cooking. So we had a simple meal of strawberries, grapes, blackberries, kashi sesame honey crackers, and medium cheddar cheese. Super yummy, super simple, and very pretty if I do say so myself!

Upon arriving home I went out and watered our patio garden and found that it is doing really well! All the plants are growing and growing! The basil is still a little smaller than what I remember it being last year so I think I might switch it's location to up on the rail instead of across the riser benches. Here's a wee picture of the final second phase of our patio garden this year. This year's garden includes; sage, rosemary, thyme, basil, green peppers, jalapenos, cucumbers, and tomatoes. Hopefully, we'll start seeing the beginning of veggies very soon!

Meatless Monday ~ Veggie Stuffed Shells

This is our second official Meatless Monday. In an effort to ease a certain beloved meat eater (Shane), into this new way of eating, I have been focusing on pasta dishes initially. Last week we had baked pasta. I essentially used leftover pasta of various shapes and sizes, pasta sauce, and goat and mozzarella cheese. It was pretty good and something that we usually have with ground beef mixed in so it was an easy "transitional" meal, if you will. This week we are having veggie and cheese stuffed shells and then next week we'll start actually having a little more fun.

This week's recipe comes from kraft.com . I find that they have good recipes for me to "jump off" from, from time to time. In this case, I actually got it from a friend and was pretty happy with the whole thing. You can access the recipe from here .

The Verdict?

It was okay. Okay enough that I will make it again with some modifications. I think I'll use part skim ricotta cheese instead of cottage cheese and not use the red peppers because while they are yummy the texture was a little off. I think I'll also use Italian seasoning including some fresh herbs instead of the salad dressing packet. So really, I'll just do it my own way... he he...


I apologize for the terrible picture but we were so very hungry tonight and there wasn't a lot of time for artistry. As you can see I served it with crusty sourdough and olive oil with herbs (YUM!).
