Healthy Environment, Healthy Us

Since this started out as a healthy living blog and because I feel pretty strongly that environmental health and human health are strongly intertwined, I thought I would focus this post (and hopefully many more to come), on efforts we are undertaking in the way of health that I hope is also making our planet a wee bit healthier too...

Tomorrow, we will start participating in the Meatless Monday movement and then after dinner evening walks.

The idea behind Meatless Monday, is that by choosing to not eat meat just one day a week, we are improving our health and decreasing our carbon footprint. It also gives me a chance to whip out a few of my favorite vegetarian and vegan recipes and learn some new ones! I also plan to share what we are eating for Meatless Monday and potentially a few recipes too! Long term, my hope is that we will eat less meat overall, but with respect for my hard core carnivore husband, we are starting small and I am thrilled with that.. for now :)

Typically, I workout alone. I find that I can focus better on my efforts if I go it alone. However, Shane and I like to swim and take the occasional walk together so we decided in order to benefit us both physically and help us become a little more connected to the nature around us we would try and do a nightly, post dinner, walk. So it allows me to get in a tad more cardio along with my usual routine and give us a chance to spend a little more quality time together in a very healthy way.

So look for Meatless Monday posts and I promise, more pictures! Are you starting anything new this week?
